Gluten-Free Pumpkin Bread
(from Kimberly's Gluten-Free Holiday Recipes)
This is a great recipe for kids! I made this for my daughter and she just loved it!!





2 cups pecan or almond flour
½ teaspoon baking powder
2 teaspoons ground allspice
2 ⅔ cups sugar
⅔ cup shortening, softened
1 can (15 ounces) pumpkin
4 eggs
⅔ cup water

1. Preheat oven to 350°F. Grease (2) 8 ½ x 11-inch bread pans
with gluten-free shortening.
2. In large bowl, mix pecan  flour, baking powder and allspice.
Stir thoroughly.
3. Add sugar, shortening, pumpkin, eggs and water. Stir
thoroughly.
4. Pour into greased bread pans and place in oven. Bake for 60
minutes. Remove from oven and cool completely.

Makes 2 loaves.
