Thanksgiving's Featured Kid-Friendly Recipe



Ginger-Cream Spice Cake

¼ butter, softened
¼ cup shortening
2 eggs
1 3/4 cups sugar
1 teaspoon vanilla
1 ¼ cup water
2 cups flour
1 ¼ teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground nutmeg

Ginger cream

1 tub whipped cream
¼ cup powdered sugar
3 teaspoons ground ginger

Pumpkin Spice

1. Preheat oven to 350 degrees. Grease bottom and sides of 2- 8 or 9 inch pans.

2. In large bowl mix butter, shortening, eggs, sugar, vanilla and water. Stir until blended.

3. Stir in flour, baking soda, baking powder, cinnamon, cloves, ginger and nutmeg.

4. Pour in baking pans. Bake for 30-35 minutes or until wooden toothpick comes clean when inserted in the middle of cake.

5. Let cool.

6. Remove cakes from pans. Set one cake on serving plate.

7. In large bowl mix whipped cream, sugar and ginger. Top first cake with layer of cream mixture.


8. Place second cake on top of first cake. Spread layer of topping of top. Sprinkle with pumpkin spice.
